The project Ita.Ca.® is a project of national importance aimed at monitoring and reducing emissionsHarvest corporate greenhouse gas.

The objective of the work is that of measuring the so-called carbon footprint, or the quantification of greenhouse gas emissions in company wine, with simultaneous identification of the areas greatest impact within the entire production process, and areas to be targeted more effectively through concrete actions and circumscribed, for the reduction of emissions themselves.

In a time when, also consumer choices are increasingly oriented to support environmentally friendly products and chains, It assumes greater importance the ability to provide clear information on practices and processes, so also the consumer with his choices can reward companies and territories involved in the search for a possible environmental sustainability. Being winemakers is an old commitment which today it involves strenuous opposition to the impoverishment of the territories, viable only thanks to the exploitation of natural inclinations, and achievable only in the presence of an essential economic and environmental sustainability of production processes. Conservation and development of the area are the starting point of a careful viticulture, able to exploit with intelligence, respect and foresight available resources, and to get closer to a concept of full sustainability.

I was thirsty, and then saw that I had to drive ... and we all know that drivers should not drink… a grape juice was perfect!  Henry, He explained that this soft drink is produced with 100% di frutta, no added sugar, Preservative free, without coloring and without heat pasteurization.

  • I appreciated your juices flavored. You want to tell how did you arrive at these combinations?

Merlot-Merlot-lemongrass-ginger and anise-licorice, I am the result of a further search of flavors and nutritional facts with chef David Garbin. Together we wanted to give our products in two different purity appeal, combining quality and digestive stimulant herbs and spices used they put available, to those already contained in grapes. They were born the two flavors that give a strong character of UVA, staff, and that appeal to adults as an aperitif or as a dessert.

    Cinzia eccomi. Il succo d’uva del quale hai scritto credo che certamente sia un ottimo prodotto, perché ottime sono le persone che lo hanno ricavato dalle uve, trattate come si devono trattare esseri vegetali complessi come sono le viti. Qui in Austria la tradizione viticola e vinicola sono antiche e profonde. Ottimi e in alcuni casi straordinari i bianchi della Wachau, discreti i rossi che negli ultimi anni hanno fatto passi da gigante. Io parlo sempre da appassionato e non da esperto, voglio precisarlo. Il vino lo amo, qualcosa so, ma credo di dover imparare e capire ancora molto. Ma tornando al succo d’uva direi che in Austria l’abitudine a bere i mosti tal quali freschi e senza la minima fermentazione, e poi a diversi gradi di fermentazione è diffusissima e antichissima. I Traubensaft sono succhi di frutta-uva- bianchi i rossi, filtrati o pur come dicono qui, foschi, torbidi e senza filtrazione. Poi c’è la famosissima tradizione degli Sturm, che sono mosti a diversi gradi di fermentazione, rossi e bianchi e di diversi vitigni autoctoni. Nel periodo della vendemmia si trovano in ogni Heuriger e in tante feste popolari legate alla vite ed al vino. Hanno questo nome, Sturm, tempesta, proprio per la loro caratteristica principale che è quella di creare una tempesta intestinale di vaste proporzioni, in stretta relazione alle quantità e qualità consumate, ah ah ah. Sera bella a tutti. ;-))

    Grazie Cinzia delle tue parole, hai colto perfettamente l’essenza della nostra bevanda analcolica! Il d’UVA è una interpretazione del frutto molto originale e fedele, centratissimo tenere vino e succo d’uva distinti, sono due cose talmente diverse da avere in comune oltre all’origine la capacità di trasmettere l’espressività di certi vitigni. Siamo convinti che il grande spazio che il vino occupa nella cultura e nei nostri cuori non potrà essere modificato, d’UVA è uno dei registri espressivi dell’uva. Sono Wilma Zanaglio e collaboro con Enrico di Martino al d’UVA.

    Mi fa molto piacere leggere brillanti e puntuali osservazioni sul d’UVA e sul suo rapporto con il vino. Temevo che l’argomento un po’, diciamo, “delicatoavrebbe sollecitato qualche dissenso. Grazie a Cinzia e grazia e tutti voi. That said, noi ci stiamo dando da fare per far conoscere questo affascinante lato analcolico dell’uva. Ci farebbe molto piacere condividerne la conoscenza.

    @Enrico. L’uva come frutta ha già un meraviglioso impiego da noi in Italia, il succo d’uva è una novità. Non penso che possa essere una alternativa al vino ma sicuramente potrebbe essere una meravigliosa soluzione di mercato per i produttori di uva. Proprio qualche ora fa parlavo con un amico che mi diceva che si inizia a parlare di prezzi dell’uva per fare vino, sicuramente i prezzi non sono esaltanti e quindi, commercialmente parlando, condivido totalmente il percorso. Sulla comunicazione posso solamente dire che a mio parere è la pecca della produzione agroalimentare italiana, da corso, devo ammettere che l’Italia dovrebbe imparare dai cugini francesi nel comunicare e fare filiera di territorio. Ma questo è tutto un altro discorso…

    Condivido tutto. Non è in effetti un prodotto alternativo al vino, d’UVA è un succo, solo che ci siamo posti l’obiettivo di produrre un succo di altissima qualità, e l’uva, in questo, col suo potenziale, ci aiuta; d’UVA comunque rimane un prodotto agricolo, di territorio. Sarà nostra cura veicolare anche questo messaggio, magari imparando a farlo da chi, in effetti, lo fa benissimo da secolicon l’auspicio che il mercato possa premiare tutto ciò.. spero di conoscerla presto!     Wilma è stato un piacere! L’impostazione ecologica di Enrico in vigna è cosa a me molto gradita. Ho passeggiato da sola, long, e forse è li che ho preso una decisione importanteStare tra me e me tra le vigne è un piacere immenso. Il succo d’Uva e il vino sono due forme d’espressione dell’UVA, forme diverse di un frutto che amoGrazie a voi!

    Tommaso cito le tue parole: “non penso che possa essere una alternativa al vino”, quindi ribadisco come è già stato più volte detto che NON è un’alternativa al vino, mai e poi mai potrebbe esserlo, è solo un succo di frutta, un succo d’uva. Concordo invece con te sulla seconda parte della tua affermazione che cito: “ma sicuramente potrebbe essere una meravigliosa soluzione di mercato per i produttori di uva”, la mia finalità scrivendone era proprio questa…
